Grape variety: 90% Nebbiolo 10% Vespolina.

Alc. %: 13,5°

Production area: D.O.C.G. territory of Ghemme. Minimal use of chemical agents.

Method of breeding: guyot.

Harvest: manual in boxes.

Vinification: in stainless steel tanks with temperature control, followed by malolactic fermentation.

Ageing: at least 3 years in medium-sized French Allier oak barrels.

Aging: at least 6 months in bottle.

Serving temperature: serve at 16-17 ºC, in a large glass, taking care to ventilate well before tasting.

Recommended pairings: excellent with red meat, braised meats, game and mature cheeses.
